Well, it's that time of year and my truffle guy Ramelli is meeting me at an airport hotel lobby next Wednesday morning with fresh truffles from Italy. The heady aroma of Alba truffle, warm melty Fontina cheese, toasted hazelnuts, and creamy risotto paired with Barolo and Barbaresco are the magical evocations of Northern Italy's crown jewel – Piemonte.


Here is our proposed menu:

First Course

Peperoni ripieni di Piemonte
Roasted sweet peppers stuffed with local cheeses, pan-fried and served with a basil and hazelnut pesto

Paired with - Rizieri Sori Del Ricchino Dolcetto Di Diano D'Alba 2015, Piemonte, Italy

Second Course

Bagna cauda, acciughe con salsa verde, pane e verdure
Mixed vegetables and crusty bread with a warm garlic and anchovy dip and green sauce

Paired with - Accornero Giulin Barbera Del Monferrato 2013, Piemonte, Italy

Third Course

Agnolotti Alla Piemontese con tartufo D' Alba
Fresh made pasta stuffed with minced beef and spices served with a butter and sage sauce and topped with fresh truffle

Paired with - Castello Di Neive Barbaresco 2014, Piemonte, Italy

Fourth Course

Pollo Valdostana con Paniscia e Rapini
Chicken supreme with prosciutto, melted Fontina cheese and a mushroom and wine sauce served with a sausage and vegetable risotto

Paired with - Beni Di Batasiolo Riserva Barolo 2007, Piemonte, Italy

Fifth Course

Bonet di Amaretti alla Piemontese con Gianduja Gelato
A cocoa, biscotti and caramel flan served with dark chocolate and hazelnut gelato

Paired with - Viticoltori Acquesi Brachetto D'Acqui, Piemonte, Italy
